Food I Ate Fridays - Blueberry Crisp and Overnight Oats

Last week I did a little Breakfast food prep so I didn't have to cook/do dishes every morning, and the results were truly glorious.  I switched back and forth between these two and looked forward to both equally.  I wanted to do one hot dish and one cold dish and guys... they both filled me up and were wholesome and I felt great about both options.  

The first Recipe is from Shauna Niequist's Bread and Wine  and it is her Blueberry Crisp Recipe.  I have been wanting to try it for awhile, and now that I have, I cannot believe I waited this long!  I look forward to making it again as a dessert to be spooned over ice cream and trying different fruit with the same preparation.  Its delectable and warming and all kinds of cozy words that go along with that.

Blueberry Crisp

Ingredients

4 cups blueberries (or almost any fruit), frozen okay
1 cup old-fashioned oats
1/2 cup nuts, chopped (walnuts and pecans work great)
1/2 cup almond meal
1/4 cup maple syrup
1/4 cup olive oil
1/2 teaspoon salt

Instructions

Preheat oven to 350 degrees.
Mix together oats, nuts, almond meal, syrup, and salt with a fork.
Pour berries into an 8 x 8 pan, and then layer the crispy topping over it.
Bake for 35 – 40 minutes, or up to 10 minutes longer if topping and fruit are frozen, until fruit is bubbling and topping is crisp and golden.


The second recipe is one I found through Pinterest for Latte Overnight Oats and it linked me to this website. Y'all, this is killer.  I put sliced almonds, a couple chocolate chips (let's call it a table spoon) and shredded coconut on top and Lord have mercy it was tasty.   This recipe is for two servings, I doubled it and it turned out great.

Latte Overnight Oats

Ingredients

1/2 cup rolled oats, gluten free optional
1 tablespoon chia seeds
1 teaspoon turbinado sugar or brown sugar*
1/2 cup Original Silk Soymilk
1/4 cup brewed coffee, hot or cold
1 teaspoon vanilla extract

Instructions

Add all ingredients to a bowl or jar and stir to mix completely.
Place, covered, in the fridge for at least 3 hours, or overnight.
Add extra soymilk in the morning if you want to thin it out a little bit.
Serve cold.

These Are a Few of My Favorite Things - Life Lately


Life feels like it is rushing by.  
Does anyone relate to that?  

The pictures above are my collection of images over the last month or so... I'll try to give a little synopsis as way of an update on my life! 

Our new home is glorious and as we wrap up our 6th month there (WHOA) we are just now starting to feel settled I think.  Oranges are in abundance and new flowers seem to pop up everyday.  Every time I am in our backyard I feel more in love with our sun room, and every party we have thrown in it has a little magic.  We are planning our 2016 projects and are excited to start our garden this year (fingers crossed).

I feel like we have been beer tasting a lot lately.  A lot of local breweries are right by our house and it is me and Bill's favorite thing to just grab a beer together on a weekend.  

I am back to yoga regularly, and am planning to look for a new studio closer to home.  The one I have been going to I LOVE, but it isn't as practical now that we have the dog to make the trek down.  Speaking of, isn't that picture of me and him wonderful.  Sweet moments like that are what I live for with that little guy :)

Oh and last but not least, that puzzle.  We did it with my parents while they were in town for Christmas (which was the absolute loveliest) and to say it was challenging would be an understatement.  It was however a wonderful holiday activity to do together and reminded us of our European excursion together to the very place in the picture.  

Guys, I am doing well and I am happy and on my way to being healthy again.  I feel like the holidays always encourage a break from the normal healthy ways, when there are things you look forward to all year.  Cheers to a productive and simple 2016 where we all get a chance to connect with those we love and enjoy a pint with family and friends :)

Norm Rooney

Guys we got a puppy!

This pretty much explains my absence.

I had plans to rave about how much I love him and how sweet he is, and I do feel that way, but first I want to tell you that today he ripped a hole in one of my favorite sweaters, peed on the floor and literally would not listen to a word I said.  I am learning that puppy life is harder than I thought it would be and today was definitely an example of that!


All that being said, this little guy is such a treat for Bill and I.  We named him Norm because we met about 5 or 6 goldendoodles (which is what he is by the way - half golden retriever and half poodle) all named Murphy and felt like that was a very old fashioned name.  We wanted a name that would be Murphy's old man best friend, and so we came up with Norm and it stuck.  Rooney is one of Bill's favorite soccer players, and so the name was decided!  Norm Rooney is really a perfect fit for him.


The amount that I have been overwhelmed is probably not ok, and I should probably just be honest.  Everyone always talks about how great puppies are and how much we would love the experience, but y'all it has been so hard and often in the last two months I have wanted to throw in the towel.  I feel yoked to my house, overwhelmed by things he does, and generally frustrated with the amount of attention he needs.  I guess I should have done more research huh!


But then he looks at me with that fluffy face and he snuggles onto my leg and he runs around in our backyard like it is the best day of his life, and the truth is, I forget howfrustrated I am with him and see him as the sweet little peanut that he is.  I love him so much its embarrassing.  I cannot get enough of him.  Yes I am contradicting myself.  But I can't help it, I really feel conflicting emotions!  He is my best friend and my least favorite creature on the planet at different moments.


He is super smart and I know in the end it will be worth every moment of frustration because he is already such a member of our family.  I can't even believe the things that come out of my mouth about my obsession with him and how much I just want to run home and snuggle him all the time.  I guess that is the beauty of pet parenting, a mess of emotions tangled up into a great love for that little baby.  Must be a preview of parenting!


This post felt rushed and like I cannot really put into words the experience we have been having, but such is my life right now.  Know that as I navigate this new world, I will grow more and more into being comfortable with it and hopefully have more to tell you about it all.  And yes, he really is that cute in person.  It's over the top and he is like a stuffed animal :)
